A Little History of Muffin
The word muffin first appeared in print in the early 18th century, and recipes began to be published in the middle of the 18th century.
Muffin is connected with moufflet, an old French word applied to bread which mean "sort". Muffin may originate as far back as the 10th century, yet the muffin became fashionable bread during the 18th century. There are two types of muffin. Let's see the difference and specialty of them.
English style muffins are yeast raised and cooked on a griddle. Early English muffins were cooked in muffin rings which were hooplike and placed directly on a stove or the bottom of a skillet.
American style muffins are 'quick breads' made in individual mold which leavened chemically as opposed to yeast leavened. Quick breads were not developed until the end of the 18th century.
